I would be curious to here your experiences if you get one. I've just recently become interested in Japanese style kitchen cutlery. Purchased a Guyoto for my first foray, it has a western flare to it. Many of the J-knives are quite a bit thinner and involve higher hardnesses than found on many europ...

animal duty
Endura did just fine for prepping to skin, and gutting too. Made contact with bone several times, just rolled the VG-10 a little but was easily touched up. Can you guess what kind of animal this was? :)

Im not sure I would consider the Canadian Special especially Nessmuk like, Bark River actually makes a Nessmuk. I have a custom Nessmuk and it's ok but I now learned that if I want I paddle shaped, not especially pointy Nessmuk like object, I would like it to be more UPSWEPT for skinning purposes. B...

About 12-15 years ago I consumed copious amounts of sushi with no adverse affects...but, now, I view the world differently, I only eat meat I raise or occasionally meat that has been raised by people I know, or wild game. Honestly the Fukishima nuclear plant's demise has got me very concerned about ...

I've been pretty happy with Victornox (previously labeled Forschner), mine have the black fibrox handles. I consider them a value at their price point. Plenty thin behind the edge for my purposes, steel on the soft side, easy to sharpen up quickly. BUT....this morning I just ordered a Richard Artife...

Yes I was told after the fact that this dog was rescued, and the previous owner was some mean man, so it treated all men the same, only nice to women. I don't believe any breed of dog is inherently dangerous with the exception maybe of wolf-hybrids, but that is kind of getting out of the domesticate...
