I suppose the purpose of the lamination is to prevent rust? But the edge itself (the only thing that matters as far as cutting is concerned) remains uncladded and so is still subject to rust. I can't quite get it.

Salimoneous, your pictures are remarkable. Can plain mineral oil achieve the same result, do you need special oils? Also, do you need to immerse the handle in the oils for a certain time for the oils to be absorbed? Thanks.

Cliff, what do you mean by 'low edge stability'? Do you mean the edge is easy to chip, loses its sharpness very quickly or what? Thanks.

Agreed. The Southfork would be very good for cutting and ill fitted for chopping, for example. For the latter I would use a Becker or something similar.
