First of all the Sharpmaker will be good for sharpening your kitchen knives. :) I'm currently using a Shun Wasabi set and I love it, the steel is very easy to sharpen and taes a ridiculous edge and holds it rather long, probably not as good as VG10, maybe somewhat close to AUS8? I think those are some of the most common ones. (Along with other cheaper 2" blades.)

A real mirror polish is quite a challenge. Something like a nice satin finish (finishing with 500-1000 grit) is much better, it shows scratches less and is easier to do. :)
Also, all the little nooks and crannies will be a PITA to refinish if you want to go that far.

Civilian is definitely not for that kind of use (purely SD) the tip is not suitable for utilitarian use. I would just get the H1 SpyderHawk, H1 is tough and will take a beating, it will however need a bit more sharpening than VG-10 (PE that is), SE should perform about as good as it's VG-10 counterp...
