Thanks for the quick responses! The thing is, I want a knife that will hold its edge well. Really well. Not because I don't want to sharpen it very often, but because I want it to still cut well all the way thru extended cutting chores (not abuse, mind you). If VG-10 will do that, I'll might just go...
