Are you using a Sharpmaker or benchstone? My guess is that the bevels on the kitchen knife are too blunt, well over 40 deg., so you're not hitting the edge. I have XHP in Cat 4 with ZDP-189, that's from the Manix 2 I tested before so they are close in edge retention from my testing. It doesn't seem to micro-chip like S30V has been reported to do on stuff like cardboard. I haven't had any problems with chipping on my Manix 2, although it is a pretty thick grind. I'd go plain edge for sure. Both mine are PE. I save full SE for H-1 models usually, and I think the PE really fits the nice sweeping blade of the Stretch 2.

m390 @ 62 Rc would be siiick. I'd like smooth CF like on the UKPK, but I realize the Millie is a more utilitarian platform, and therefore peel-ply is the obvious choice, as it has been in the past.

I also like the idea of blue G-10.

I'd say D2 is definitely more corrosion resistant than M4 (D2 is almost stainless). I believe M4 is MUCH tougher.
