Re: Spyderco Kitchen knives
I'm looking for opinions on the kitchen knives featured in the last byte. I was considering a Myabi but these Spyderco's look interesting. How does CTSBD1 hold up in kitchen use? Is it comparable to top tier Japanese steels? I think the Miyabi uses the equivalent of ZPD189. Any input is appreciated...

Re: Suggestions for a non-flexible serrated kitchen knife
A chef's knife will handle the majority of bread but it will not handle all bread. That's why I advocate not spending much on a bread knife as it will only be needed occasionally. I would not call the edge on this knife overly toothy. Lightly finished on an 8k stone. https://i.imgur.com/nzq67Mn.jpg?1

Shun aren't bad, and if you like them, great, but you can definitely get much more performance in the same price range.

Re: Suggestions for a non-flexible serrated kitchen knife
I have a lot of nice kitchen knives, and for me, this is a place where you needn't spend any kind of money. Pickup a Mercer 8 or 10" serrated bread knife (off set or regular) and call it a day.

Re: Your ghost-finders
This is the stuff I reach for most often. What I grab depends on the steel, knife, application, and task requirement. https://i.imgur.com/dYNEzlW.jpg?1 I have more stuff for sure to include a well-kitted KME that rarely sees the light of day any more. A new Shapton 220 should be arriving today and o...

Re: Happythoughts necklace pendant
Hi Eli, Haven't used Kirinte yet, but I'm not opposed. There are many variations though. sal I have some knife handles in Patriot, red pearl, and a light blue and they are all very nice. Not entirely sure how well the patterns would translate to small items with holes but it is beautiful stuff. May...

Hi Tristan_David, My apologies for your frustrations. All on me. My wife Gail and I are 'On Island" and the Totems are in Colorado. No one is there to follow up with contact. Kristi has been setting up the website, but it still needs some work. We have a new Assistant, Gail A. and she is on va...

Re: New Knife Sharpening?
Is it best to always sharpen a new knife that was just purchased to get optimal blade performance? Yes. If you want to use the factory edge early on to get a sense for what it feels like and how it performs as a frame of reference, fine. But always put your own edge on a knife before too long. With...

Re: Best 5th pocket EDC
Victorinox Rambler. Ever. Single. Day. Yes, I find the Rambler the most versatile and best tool one can carry in that ( very flat!) size and for that low weight. Tools like LM Squirt and Micra (which I like too) are actually really "boxy and thick" compared to the Rambler (and they don´t ...

You are correct on all accounts. I have Murray Carter collab though, it’s excellent on the onions, and also fun to use. I’ll tell you when the honeymoon is over. With all due respect to Sal and Murray, in the kitchen knife world the Carter collab is not considered a very thin knife. Never handled o...

Re: A perspective on a fad in the knife world.
Buy say a Takamura R2 petty or a Yoshikane santoku or a Shibata bunka or a Watanabe nakiri and you'll have an entirely new understanding of "geometry cuts". I was pondering just this evening that I need to get serious with some thinning and shoulder reduction on my Dragonfly. Sal and Eric ...

Re: Triple B/Spyderco Folder
Saw the thread bumped and got excited. Most anticipated knife remains most anticipated. Have you heard anything about the actual design? Or are you mainly excited because of the designer? I’m curious because I’d love to hear more about the design itself. I don't know anything about the actual desig...

I taught my children to be kind, sympathetic, compassionate, forgiving, thoughtful, and loving people.
I also taught them if they get punched, to punch back twice.
It takes a balance to make a polite society.
