H1 is also a very low carbide steel and because of this it has high edge stability. With the teeth protecting the scallops, and a supposedly very hard edge, and the high edge stability, it is a good choice to get serrations unless you're a PE only kinda person. Yes to Tom's post above. I'm not sure why this is, but I get the same feeling. The UF sharpmaker rods give an excellent polished edge, but it seems to lose its bite in use so fast

Good thread idea Cheddarnut, and I usually cut things like phonebook paper, arm/leg hair, and things like that to test the sharpness. I think I'll come back to this thread when my Pacific Salt yellow SE and Lil Matriarch get here monday. The SE should be interesting for me, a new experience.
