Thanks. What about the texture? I thought it was kind of a laminate over the fibers, making it smooth. Would it be a good handle for a sweaty (or wet) hand? I would think smooth would be more prone to slipping, but I guess stainless steel suffers from the same predicament.

Not to hi-jack the thread, but can someone tell me (other than looks) what the advantages are of CF on the handles? I've seen several knives done this way and never really known.

Ok, and one follow-up question: what is the cost difference? I've seen the III for as low as $42 (New Graham), and the Vesuvius for around $85 (if it can be found). Does that sound right?

Forgive my ignorance, but is the Vesuvius the Centofante III? What is that inlay on your knife? Was that available or is that a custom? It's a great knife, and I'm just becoming aware of it. Thanks for the info and great pics too!
