Personally for general EDC I would go with the CF Delica. Japanese water stones, natural bench stones that use water as a suspending medium instead of oil. There are two types of sharp, coarse sharp and polished sharp. Spyderco factory edges are coarse sharp because I believe they are hand sharpened on a belt sander, whereas the edge that is obtained on a Sharpmaker (if you use all 4 steps) is more of a polished sharp.
