i have almost bought a yaxell santoku in bd1n myself but changed my mind and bought a kohetsu in hap40 (65hrc) instead in the last minute because i didn't like the sweeping belly in the model yaxell has. been hearing a lot of good stuff though with bd1n and i'm surely going to try it out in my kitch...

HAP40 optimal edge angle?

I have read somewhere (sorry, I forgot where) that the optimal edge angle for HAP40 is 15dps. Anything lower than that and the edge doesn't hold much. Based on your experiences with HAP40, how true is claim?

we once hired a guy to lay and install ceramic tiles on our floor and lent him my delica to open the boxes containing the tiles. man.. this really scratched up and ruined the blade's tip

been using xhp in the kitchen (meglio) and it definitely rocks! the edge stays long and is quite tough.. much tougher in fact than my vg10 santoku (mcusta) being run in the same hardness. i figure cruwear will definitely excel over it a bit more

i have read somewhere about sal talking about lc200n to be offered in the kitchen line in the future and i totally agree that sprints should also be offered to kitchen knives particularly the santoku and the chef's. i'm thinking of cruwear, s110v or even the japanese hap40 and zdp

if you are worried about rust and edge holding, just get a carribean. I have a spydiechef that i don't even wipe down or wash since the day i bought it.. it hasn't rusted on me yet. this is the reason why LC200n is now my favorite stainless steel (used to be vg10)

i never oil my vg10 delica. i just make sure to wash it with fresh water and wipe the blade dry after cutting food or packaging and it has never developed rust. of course i never carry it while i'm running or any physical activity which involves sweat. the only time it developed pitting was when my ...
