So for most of us who buy production knives and have no skills or intentions of regrinding a blade, but can reprofile an edge to say 15 degrees per side, are high carbide steels still at a disadvantage compared to low alloy steels?

Ladybug for ten years. Now Techno and Manbug in Zdp 189. Amazing "little" knives. I believe Sal mentioned he always had two knives on him and one was always a Manbug.
