I shall dig one up and let it hang for a few days. My friend gave me a bunch of tops off his garlic plants and I put them into the ground. None have come up so far. Maybe they will next summer? Good to hear you have a good crop. I have some growing and the tops are full of what seem to be seeds. Which part of the plant is eaten? The top part with the seeds or the bottom part underground , the root? Sorry for the stupid question...I'm not that garlic oriented.

My old Delica PE is tip up and carried in my right front pocket daily and never opened on its own. However, another brand did open on its own and that was a tip down. I don't carry that one anymore. So I'd say it depends on the knife whether to carry tip up or down.

I worked at a local newspaper doing similar work you are doing. We had a homemade knife that we used all the time. I think someone made it from a shearer blade? It was tough steel and held up to a lot of abuse. I wish I had that old knife now.Try a Spyderco and let us know how it performs for you.
