A no-BS dedicated 8" cook's knife. Not a Santoku, no serrations, just a true purpose-built cook's knife. I'm thinking something along the lines of the older French knives that today would be considered a hybrid of a Gyuto and western chef's knife. A flatter knife but with enough belly to still...

If I remember correctly. Calypso Jr is 2005 and Delica is 2006 sprint runs. Both runs were 1200 pieces. If they mint with original boxes, they can have some collector value. Recently Delicas were sold from $111 to $215. Burgundy Calypso I didn't see for sale lately, but I am not watching. Good luck...

Without of doubts Maxamet blade can do many things, which S90V cannot. All depends on our needs and desires.

So a Ronin 3 and yojimbo 3 in maxamet? I'm good with my yojimbo 2 I missed out on the S90V, and I think the Maxamet is better steel. Better for what? Edge retention, scoring glass, cutting tin? I see. I use different tool for scoring glass and cutting tin. Edge retention of S90v is quite sufficient...
