It’s interesting how personal knife choices are for people. There really is one perfect knife out there for each of us. We have a block full of decent kitchen knives, but the only one I use is the santoku.

Amazon had them a bit ago (sold by Fradon Lock). Not sure if they still have them or not. I was able to get mine (gift from the wife for Christmas), by searching for dealers and going with one that shows up later in the search results. Not I. It’s hard enough to find a knife with a black handle when you drop it in the woods. Pretty sure anything with a camo handle would simply evaporate once it touched the leaves.

I third this. After experiencing the wire clip on the Chef, I don’t know that I’d enjoy the other style anymore.

Spydiechef! Same knife I’ve carried every day since it was in my stocking on Christmas morning. Not really sure if there’s a knife out there right now that could ever kick it out of my pocket.

I love the idea of LC200N, because of how resistant the steel is to corrosion. It has also seemed to perform as well as some of the more commonly used ‘higher end’ steels in some tests. For my uses, corrosion resistance is more important than edge holding or toughness, or any other measuring metric....
