I would suggest H1 for its toughness ( and to a lesser extent for its corrosion resistance) over ZDP. The nature of this knife makes it rather delicate, and while I like ZDP a lot, impact resistant it is not (assuming you are contemplating flailing this thing around in a SD frenzy, impact resistance...

I should probably point out that I don't use S30V very much these days

When I do use S30V I generally use a coarse edge or allow my polished edge to become more course in texture as I use it (because the polished attributes never seem to last long with this steel).

Yes. In addition to cycling (MTB and road), hiking and working (the last two are not really "sports"), I am currently training for competitive cutting which is wildly fun and definitely a great way to ramp up your heart rate for a while ;) .

Interesting, I strop with 6 micron all the time, but never tried anything larger.

If you are interested I can point you to a source for diamond powders up to 80 micron (and larger!), and pastes up to 60 micron. I have often wondered how these would work for convexing a large blade?
