Ceramics can warp in the firing/baking. If they are warped now it is likely they were always warped.

I would suggest contacting Spyderco / warranty directly to see if they won't replace them.

Unless you want to spend a lot of time regrinding the edge, use the 20 degree slots to keep the knife sharp. 2) also with a S110V or M390? (the two I was looking at) In general, the more complex the steel, the less the utility of very fine high grit finishes as they are designed to hold different edges and do different types of cutting. This is why for example O1 is generally preferred over D2 for chisels...
