The easiest way to use these hones is to use them like a chefs steel. You'll be able to put a blistering edge on in no time flat with this method .

You might want to do the edge sharpening in sections and finish with smooth, light final swipes, tip to ricasso. I'd do all of my sharpening with your 701 profiles. Generally, from my experience, the H1 holds an edge much like AUS6. Takes a great scary sharp edge but won't hold it.
