I like the idea of a hawkbill. For those of you that voted for the HB, are you thinking of a blade more like a Spyderhawk (long, sweeping edge) or a Superhawk (shallow, straighter edge)? Regarding the Reverse S profile, if selected, I would want the blade to be longer than a SPOT or Dodo but smaller...

The large needlefish have very white meat and are surprisingly delicious. Filet those and fry them in olive oil and seasoning. The snapper we bake whole with a spicy olive oil and onion sauce I make.
