I have never had a knife blade chip, but I don't use hard steel blades on metal. You can take a Stanley wood chisel and chop through wood into concrete - and get chipping. A harder steel will also chip out on concrete. I have never had any blade chip using 440C, D2, M2, 154cm, ATS34, VG10, or ZDP-1...
