Regarding the strop for SE, you should consider buying some leather ropes (around 2 to 5-6mm) used in leather crafting and glue them properly on a board (or even a convex support for hawk bills). A little compound and go !

As a hobbyist leather crafter, that’s how I sharpen some of my special tools.

Same here... SAK or opinels are below 2mm and I can’t recall having seen one break under proper usage...

Would buy immediately any 2mm ffg se and pe blade at around 3/3.5 inches...

I try to keep it below 5 to avoid going crazy about rotating :-D

Without regrinding it is not too difficult to get a nice smooth finish by polishing with different grit size sand paper, have a look to some YouTube video about dyi knife making. That might be an option.
