Personally i would make a thin convex edge then blend it in with the flat grind, using various grits of wet & dry paper on glass with WD40 as a lubricant. I would also use an edge measuring device and aim for an apex @ ~25 degrees inclusive. CPM Cruwear is quite easy to work with, and it's not t...

Currently learning to work a bit with an old Singer VS3 hand sewing machine made in 1890. When new a machine like this would cost you about a month's wages, but nowadays these can be bought for only a handful of euro's. Nano-Oil is still the best i've found for both slickness & long term lubrication, and i've been using all their products for years (5-10-85 weight plus the red grease) On the aspect of corrosion protection however there seem to be better products out there. I still want to try out Eezox in that ...

A Kohetsu in HAP40 steel @ ~65 HRC would indeed be a very good choice among production kitchen knives.
