It would be interesting to see the data in the end. You will quickly learn the muscle memory, but be certain you use good technique so you do not engrain bad habits. Keep the blade completely vertical and do not drag the tip of the knife off of the rods. :)

Pampered Chef has that feature on some of their knives and they cause much more damage than they cause keen edges. The others I have not had first hand experience.
