I didn't read all the posts so this might have been suggested already. It seems to me that the desirability is because of the scarcity of knives with the steels used. Why not release production fixed blades in the same steels? Sell them for profit. People want the steels and they'll sell. The mules ...

Mr Goodcents is decent around here. They slice the meat and cheese fresh, unlike Subway. The Goodcents near me has fresh bread daily and is kept absolutely immaculate.

You can find almost anything on the internet. You might try YouTube and looking for books on be a butcher. Also try to find a local one, offer to pay for a couple sessions to learn firsthand.

As for the knives, that's marketing for you.

I've kept my limit at $150 so far but I'm wanting a Domino pretty bad. It's the first knife in a while that has made me want to go over the $150 mark.

Some brands I've tried are pretty consistent, others less so. The SAKs I own are perfectly centered. Of course the automation and tight tolerances help but it's pretty impressive for $20 knives. When I first received the knife it was difficult to disengage the lockbar, but it became easier to disengage over time. It's still "stiff" but in a way that feels secure. I didn't modify the knife at all.
