Anything I need to do different than a regular knife? Keep it oiled, clean and sharp. I heard you just have to watch it for rust.

S30v is better than vg10, but not twice as, i.e. one s30v blade vs. two vg10 blades. Personally I'd go for sage as the quality and material just feels much better, do you really need a large knife and a small knife?
