Did you take it down to 30 degrees then? How long did that take you to do the front side? Yes I used the 30 degree slots so it's 15 on the front and I kept the back side as close to flat as possible to keep the chisel grind. I used fast up and down stokes and it took about 90 mins. For those that picked up one of these, I highly recommend giving the SE Dodo a reprofile. The cutting performance is a night and day comparison. My first attempt at reprofiling an SE knife. The tips of the serrations are too pokey and don't cut very well. Been working at this one on and off for about 3 hours now over the past few days. Still a ways to go, but so far so good. I've never really followed much with SE...best to leave it toothy ...

When reprofiling a knife on a Sharpmaker I use up and down stokes. It's MUCH faster than using only down stokes. That said I only use the Sharpmaker for SE and curved blades.

The 30° edge will also dull more quickly, requiring more frequent sharpening. I let this get duller than usual so I gave it a full sharpening starting with the CBN rods then brown and finished with a few passes on the fine rods that resulted in a nice polished toothy edge that cuts with a smooth yet aggressive feel.

Put a fresh edge on the SE Delica Wharny. It was originally sharpened to about 13 degrees by leaning the blade into the rod. After the initial reprofile I sharpen the front side at 15 degrees with the CBN rods and use the fine rods on the back to remove the burr. It goes through cardboard like it's ...
