Small or very lightweight knives = wire clip Large and heavier knives = hourglass clip or equivalent I love the wire clip but it just doesn't suit larger heavier knives, it doesn't clip strong enough and doesn't provide enough traction. Put a satin finish on it. A grit from around 100-200 should work. I have done this many times. I love satin finishes because they are the easiest to maintain. A Chap' would be best if it was going to feature in the wedding photos but if you just want something to cut the wedding cake I'd prolly go a Temp' 2 only because it's a PITA getting icing out of a Millie's pivot.

I’m right handed and find tip down is the most convenient and natural way for me to clip a knife.
