With the right tools & abrasives S110V does take a dazzling mirror polish, :) (posted earlier on Bladeforums.com) The factory edge of this Spyderco PM2 in S110V steel was barely shaving armhair on skinlevel, and according to my Tormek WM200 the edge angle was near 35 degrees inclusive.
