Would vanax, lc200, etc be less brittle than white/blue at the same hardness? (More carbides means more brittleness?) My recollection is that Sal did confirm that the Jazzlica would be included in the K390 Seki series. I could be wrong though. Tradition mainly, and partly edge fineness and finish at high levels of sharpening refinement. I actually prefer stainlesses like VG10 and AEB-L on my kitchen knives. Spyderco’s MBS26 also performs very well in acute edge angles and refined finishes. But I do have a pair of lefty Shirakis in Shiroga...
