I very much doubt that (for example) chefs sit around talking about how they used their knives to tighten the screws in the hinges on the refrigerator door or to pry apart pieces of meat that had frozen together. :spyder: You wouldn't believe the trauma most cleavers have seen in a production kitch...

I advise you first work on signing in. Ordered mine! Does anyone know how long the $13 shipping usually takes? I can't remember what it said, and I need it before Sunday, because I'll be gone for 2 weeks! Matt It should be UPS ground, so you should be able to use the UPS website to calculate shipping time from the Golden zip to your zip.

So for me the implication is that "hard use" implies the chance for inadvertent or necessary to the task abuse, making an overbuilt blade with tough steel the right choice. 52100 is a ball bearing steel. Most ball bearing steels make pretty decent blade steel. Especially where edges are concerned. It is my favorite steel to forge. It is hard to find in sheet. From what I understand they're only sold at the SFO so I went to order the XHP blem for $60ish and there aren't any available. No big deal, about 14 of the other steels will work for what I want one for so I start going through them and can't find any available :( Anyone care to share their secrets...

Sounds heretical, but there is more to a knife than the steel. :spyder: S110V will definitely outperform S30V, all other things being equal, but if the knife doesn't work for you (for any of lots of reasons, such as: bad ergos for you; bad blade shape or type for your uses), it's not the best knife....

Just because it can be done again doesn't mean it will be. The CPM M4/G-10/TiRIL Military was a Dealer Exclusive that sold out pretty fast and still seems to be sought after. The only DE I recall seeing a second batch of was the black ZDP-189 Calypso Jr. for Moteng. Pretty sure there were reorders ...

Oxalic acid and similar products will get rust off but will etch the surface of steel - if you want smooth action from the bearings, this will be counterproductive.

Putting a leaf blade into the PM2 would change the knife drastically. I was once a big M2 fan but eventually gravitated toward a knife with less height (top of blade to bottom of handle) when closed.
