Centofante 3. Great thin blade. I've carried one for a while now. I think a nice upgrade on it would be to unpin it and add some embellishment somehow with scales or nicer steel

I have different pans for different uses. Sometimes you want a bit more stick than non stick or cast iron. Sometimes you want to cook at higher heat sometimes you make a sauce that comes together easier in stainless.... The real question is why in the world are they still making and installing infer...

Interesting I caught it as well but I believe it's still peel ply, just a different texture of peel ply than we've seen on the other S90/CF knives. I know the Chief is still solid carbon ...

Living in Colorado it's got some local interest but overall explains many of the events that brought us to where we are today
