hia, been thinking about sharpening out the odd mildly misshapen choils on my knafs with my kme. I've tried re-profiling with the provided 140 grit stone but even on my spydiechef I had trouble getting the bevel straight. Should I go for the 100 or 50 grit stone for re-profiling to this degree? is i...

I absolutely love the direction this is going. Having more across the board steel options in the vain of the s110v golden models is great. I can only hope that things like the native salt won't end up alone in the golden lineup. Even if golden's frn and frcp don't come anywhere close to seki's frn :)
