Take a look at one such as the new style Viele that has a blade of VG10. This steel is fast becoming popular as people get acquainted with it. And talk about smooth onpening, it has been many years since I've seen one as smooth as the Viele.

I will stick with my new style Howard Viele. After over 50 years of using and sharpening knives I have found a steel (VG10) that really suits my needs.
