Interesting, the original Schnitzel should be beef (calf) as I just viewed in an Austrian restaurant. I believe schnitzel is generally pork. Wiener Schnitzel uses veal. mushroom sauce seems strange to go with pork Schnitzel. Jaeger Schnitzel is actually quite common, although traditionally venison ...

A piece of leather with honing compound will sharpen a knife.

Having done both I would rather reprofile a blade with a strop (like the one I linked above) and several grades of sandpaper than a Sharpmaker with diamond rods.

A belt sander is even faster but you best have a steady hand.

Depends on what you call a 'strop'. an unsupported leather strap is best for touching up an already sharp edge. But something like this strop CAN be (and is) used as a stand-alone sharpening system. Even a really dull edge can be sharpened on a strop like this using sandpaper as the abrasive. Only c...

While I agree it is best to cooperate with LEO's and disclose any concealed firearms, etc (required by law for CCW holders in many states) I never refer to a knife as a 'weapon'. I consider a knife to be a tool which can if necessary be used for personal defense; my .45 is a weapon. Depending on cir...

I wish I knew more about that. My brother is almost at 20 years, and doesn't seem to know anything about knives. =\ I was always surprised how many soldiers didn't seem to know anything about rifles. But they could wipe them down with CLP just the same. Non-stainless steels like 1095 sharpen easily...

Non-stainless is a non-issue... GI's have carried 1095 et al for decades without issue. Military life is about constant maintenance--rifles, gear, barracks, everything. If maintaining a pocket knife is too much it's unlikely they will thrive in a service environment. I carried a variety of knives du...

Moran 'Fighting Knife'

I recently rediscovered my FB01 and for the life of me cannot figure out why I didn't appreciate it more when I first got it. So I started thinking about picking up another "just in case" and came across this treasure: Japan Fighting Knife Not a great price but what a surprise when you go ...

I never had any love for the tanto until I actually tried one. Surprise, surprise, surprise! For my usage at least a tanto makes a very good utility EDC. And I rarely stab car hoods. But a small kimasu-style tanto - with very straight edges – has proven excellent for general / office use. I also hav...

In theory you could brush your teeth with a Dremel too. I just think the wear and tear your teeth would go through wouldn't be worth it. Except last I checked my teeth do not have the wear-resistance of even 420... although I do use an electric toothbrush. Recommended by my dentist. I hear you rega...

I have a few Sharpmakers - keep one at home, one in the shop, and one in the vehicle - as everyone has said they are a great all-around sharpener. I learned on benchstones, and still pull them out on occasion, but the sharpmaker has replaced them for most uses. Lately I have been playing with convex...

Wow, ask the same question a few times and suddenly people get all jumpy! To answer your question: No, they are NOT "really on the same boat quality wise." I have the discontinued M16-12ZER - which I would consider a step up from the 10KZ - and it is a fine knife for what it is--a beater. ...

A Swick works great for running. It weighs almost nothing, a g-clip fits almost anywhere, and it deploys effortlessly. I clip it at about 2 o'clock and forget about it. But since I usually run after dark--and 'economic development' in my state has brought in a lot more transient types with less conc...

It is a bottle opener. I have several from different makers - and the Atwood is a very nice example - but it is pretty much a bottle opener. You could use it to pull a staple or light nail, or maybe turn a screw, or even open a box... it would probably work great if you do a lot of those scratch-n-w...
