There is no best grind and even the same grind varies as far as sharpening ease and cutting ability depending on the shape and thickness and tempering of the blade and the type of steel it is made from.

If you are looking for museum quality then hunt for a New In the Box (NIB) knife listing.

It is possible to grind and polish out a blade to a very shiny finish and replace the handle scales but I'd rather just buy a NIB.

I think everyone agrees that the knife should be sharp enough to do the job. The difficulty come from the fact that the job is different for almost every one of us. So sharpness becomes subjective.

I clean my knives and guns with Breakfree CLP, available at any gun shop and not expensive. Then I store the knives for long-term is ziplock freezer bags (never in a sheath). Keep them in a cool dry place and shouldn't have any problems (hot attics are rough on steel objects).

I like to use a small fixed blade. Spyderco makes the perfect hunting knife. It is not too big and heavy, has a great shape, and holds an edge. Ever hear of a fellow knifemaker named Bill Moran (RIP)?

I think your experience with the 23 with .40 S&W would be more than adequate. I would imagine you can get off multiple shots very quickly. Great gun.

How's the 40 compare with the 357 sig auto round just out of curiousity and speaking of 357's.

I would get whatever you can fire multiple shots with accurately. A big hooter is useless if the recoil is too much to handle with some degree of accuracy. I'd favor the .30-30 Model 94 Winchester. It isn't all that big and you can sling it as needed. The Ruger Alaskan is a hummer, but can you ...

I like the Sharpmaker. I wish Spyderco would come out with an upgraded sharpener for real knife knuts like the "Edge Pro" sharpener. It is much more sophisticated than the Sharpmaker (and more expensive too) but it can use many kinds of stones and even tapes to produce an awesome edge.

I'd go with a 12 ga. Remingon 1100 or 11-87 with 30" or 28" barrel and Rem-choked. The best security you can have is an alarm system. You can put one in yourself or have it done professionally. Good door locks are your second best security option. If you have neither than there is a chance the burgler will steal your gun (s).
