Thanks for the great tips. I’m gonna give them a plastic board for raw meats. The plastic meat boards can just go in the dishwasher. I’m still looking for a wood all purpose board. How do you sanitize your wood boards?

The cbn stone for the Gauntlet also feels more aggressive to me than the Sharpmaker’s cbn. Could be that the sharpmaker cBN you have is more worn. Fresh, new electroplated coated abrasives will be more aggressive out of box and will fade with use until needing replacement. You right, mine are worn....

I also like the oval stones. Yes for an in-between grit (similar to DMT fine 600 grit), and for a 15 dps base. The way the cats eye stones fit in to the base allows you more choices to position the stones, and fits more securely. The cbn stone for the Gauntlet also feels more aggressive to me than the Sharpmaker’s cbn.

I have the Gauntlet and am in love with the oval cbn stones and get better and much faster results than I ever got from the Sharp Maker. The longer stone offers more surface area to grind on with each stroke. Please offer the Gauntlet in more angle choices. I would use it more if it could do 15dps. ...

I have the 2nd generation blue Wharncliff in 20cv and it is a real slicer with good g10 scales. Solid feeling slim knife. The blue 20cv is $104 at Dack and the Magnacut is $95. I’m thinking about getting the uncoated Magnacut but then have to spend about $60 for nice scales.
