:D OK, kind of related. I love my G-10, ATS-55 Police: for slicing cheese! Open a nice bottle of red, lay out the stinky cheese and go to work. It handles any cheese with ease. A conversation peice? More like a conversation stopper. What fun!

Good info., thanks. I kind of suspected that about VG-10 as it gets a lot of chatter on the forum. From my personel use I can't tell the difference between the steels. OK, I've gone over the very impressive Steel Chart several times. And " for Gods sake Jim, I'm a drinker (er.. doctor) not a blade-smith". I currently hold Spyders with vg-10,ats-55 and aus-10. What do these mean as far as cutting, sharpening, retaining an edge and stength to pop a bottle ...

I found a good selection and good prices for Santa Fe's on E Bay at " The Knife and Tool Store" on-line store. Haven't ordered from them so can't comment on service etc.

Has a lefty Delica SS ever been put out? I understand the carbon lefty sold out, so there must be a good market for them. I would love to get one....or two. Anyone know?
