I am a mushroom enthusiast. I confess to using opinels quite a lot - they are incredibly thin, which is really ideal for mushrooms. Spyderco doesn't have anything comparable. I also appreciate their ease of sharpening. A Centofante or Jess Horn would be good options. :)
