Perhaps some factory edges are more obtuse than your Sharpmaker rod settings. Switch from the 30° inclusive setting to the 40° setting. My wife has used the Z-Cut knives for chopping vegetables. Because of the handle and blade configuration she says she doesn’t cut herself anymore. That’s big.

I haven’t used them enough to say much. The blade stock is very thin, promising good slicing. The plain edge is sharp, but I’ll hit it with the Sharpmaker for maximum sharpness before comparing it with the serrated. Because of its light weight the z-cut feels insubstantial in hand. I want to thank Spyderco and its publications/promotions group for the sumptuous Reveal 2 catalog. Printed on coated cardstock with detailed photographs it reminds me of the best advertising of decades ago. This, like your yearly catalogs, is a keeper. I'm ready to order the Z-Cut series.

Thanks for providing it, Sal. I have had my Endura 4 ZDP-189 a couple of weeks. The handle and blade fit my tasks.
