I had minor chipping issues when I first started carrying S30V knives. The high wear resistance had me using low grit diamond stones and pressing too hard. Once I figured out what I was doing the "heat treat" improved and I had no issues any more. :) Learning to not have burrs also was an...

Better an underperforming steel in the hands of customers you know the majority of will only be lightly using their knives is a safer bet. You got it in one. What's interesting is the higher percentage of Serrated edges than you normally see in a list of people's knives.
