If we're talking non -kitchen knives, probably either the Dragonfly Salt or else the ARK.
The Dfly in particular has a very high, thin hollow grind with only 2mm blade stock.

I thought the Delica used to be in a hollow grind and then changed over to ffg? It's already out in K390 in ffg...wouldn't this be a "step back" in A LOT of peoples eyes? I started a second cutting test today with the Sandrin Torino. After a couple hours I decided to take a break, so I don't have results yet. Might try finishing it up tomorrow. Cutting up some tomatoes for supper. It's not insanely sharp anymore, but you wouldn't know it from the way it cuts. :cool:

We still don't know how invested the OP is regarding serrated edges. Perhaps for now he is just looking to test the waters for serrated edges and steels suitable for SE. I did so on the cheap with a couple of Byrd serrated models in 8Cr13MoV. Sure, there are better steels for serration, but 8Cr13Mo...
