I touched up the Santoku K08 today. Light passes on the medium SM - I used the 30 degree Back Bevel (15 degrees) on the right side, which came with a steeper grind then the 40 degree edge (20 degrees) on the other side. My santoku, purchased new a couple of months ago is definitely asymmetrical. The edge is ground on both sides of the blade, but at different angles.

I should add - the things she likes are the thin grind which slices easily, the sharpness and the toughness that allows her to crush garlic with the side of the blade.

I love the feel of the Para 3 and the compression lock. I also love the slim, classy shape of the Chaparral and the XHP steel. But, somehow my Delica gets more pocket time than either of them.

The Manix 2 LW (CTS-XHP) has taken over my pocket space. I don't see it losing it's EDC position until I spend time in a jurisdiction that requires me to carry a shorter blade. Then the Delica or the Para 3 is likely to take over. I don't mind lightweight at all.
