I just got my RJ a couple of days ago and I love the design, blade and ergos but mine has a fair bit of up and down play. I'm still not sure if I should send it back, shipping to the US is pricey and takes a while too.

I butchered a chicken with the santoku today and it did a suprisingly good job. I thought the wide blade would have trouble but that wasn't the case at all. As you can see it has a nice belly and that helps with cutting meat and rock chopping, feels very similar to a chef' s knife in that way. The o...

Cambertree - I love the 12”, as long as they’re not too heavy. Makes chopping a chore. Also takes more space and larger cutting boards. I usually stick with a 10”. Just cut a bunch of hard plastic with my native 5 in blurple g10 and it ran through it with ease. It's not my best slicer but it's cut's well, has great ergos and is tough enough for any job I use a folder for.
