I've been thinking about this for a while. Both the D'Allara Drop Point and the Stretch are medium-ish sized VG-10 knives. I love the steel, but I'm not sure which way to go. With this talk I've been hearing about S90V and S120V and so on, what's the difference between them and S30V? I know the chemical composition must be different, but are they harder or what? Just curious.
