I don't think this argument actually holds, that the geometries I use are extreme in a general sense.

Well, yes your edges are not extreme among people with a strong understanding of steel, blade use, sharpening, and identifying and rectifying the various kinds of edge damage that can occur.

The problem is that you can skew tests to favor a certain material with z characteristic you know is superior at a certain specification.
