What epoxy are you using? I've mostly been using Amazing Clear Cast Resin made by Alumilite. It has a long working time and doesn't have harsh fumes. I don't have a specific recomendation but I have been very happy with boots from Danner, Salomon and La Sportiva. I haven't worn this model but it seems to tick a lot of your boxes.

Both have a good size blade and decent thickness without a fragile tip. M4 and s30v are both good steels. I prefer compression locks but the GB1 has a very stout liner lock.
