Of those three... 204Pp better edge retention but harder to sharpen. CPM S30V = CTS XHP for all intents and purposes. Of course S110v is the new darling out there. I just sharpened up my Sage 1 and I thought, they upgraded the Chaperral with CTS-XHP why not the Sage? I would buy a copy in a minute. In fact I would get both the Sage 1 and a Sage 2 with the new steel!*
