I have been using HIC kitchen knives for more than a year now. They hold a working edge _forever_. That's their main strength. You can't really get them 'scary sharp', and they are relatively fragile (we have broken two of the paring knives now), but they hold a useable edge for a virtually infinite...

My thinking on this continues to evolve, but at this point I think Damascus is the one I really would like to play with. I've always seen Damascus blades as 'pretty not functional' and I'd be very interested in doing abusive testing on one to see how well it held up.

Wood boards are actually more sanitary than plastic boards. And 'raw' wood boards are more sanitary than varnished or coated wood. I don't think it's fair to fault Spyderco when a totally experimental blade in a totally experimental material doesn't live up to whatever expectations you've created for it. I bought several of the Rahven kitchen knives (which cost less) before deciding to buy the HIC mule. I had a fairly good idea...

I own two Makos, one in M390 and one in Rex 121. It's pretty much a highly refined, evolved Enuff. The handle/blade ratio is (like the Enuff) quite a lot of handle per blade. I don't mind that at all, even though I was thinking I might. Having the relatively large handle makes the knife more comfort...
