I never gift expensive or special knives to non-knife people anymore.. according to my experience it's a waste. My suggestion would be something along the lines of a Victorinox chef knife. I'm so happy I committed to this religion that only allows me to get new Spydercos if they are from the salt line...

Excellent. I am very interested to test this steel for corrosion resistance. I know it’s not lc200n level but it looks like it should have excellent corrosion resistance and it will be interesting to me to compare it to other stainless steels I’ve tested like s30v, s90v cpm154, etc. Waiting for you...
