The Super Blue ( Hitachi) in the Miurrray Carter's knives is the same as Seki Super Blue.

I find that longer blades are easier to use on food. I use my pocket knife in restaurants. My knife is usually sharper . The longer blades keeps the gunk out of the pivot.
