I'm not a big steel snob (current EDC is a Gin-1 Worker) but I'll play... VG-10 - Dead simple to maintain on the Sharpmaker. Holds an edge acceptably well. S30V - Not bad to sharpen. Holds an edge well. Great workhorse blade steel. Plunked down the extra bucks to get this blade steel in my Leatherma...
